Eat Seasonably Use Them Up Tips for Cos Lettuce
- Cos lettuce is perfect for French style peas where you braise the lettuce with bacon, spring onions and stock. Then add a squeeze of lemon juice, and finish with fresh herbs like tarragon, mint and parsley
- If you think your lettuce is a bit past its best, make sure you pull off the outer leaves as you may well find that there are plenty of good ones still inside. Try making a chopped salad with cos, as its crunchiness is what you need. Add finely chopped cucumber, avocado, cress, celery and dress with and English mustard and white wine vinegar dressing. You can add some chopped tomatoes and feta if you like too.
