Eat Seasonably Use Them Up Tips for Cucumber
- Cooking cucumber is sadly rather underrated as it’s delicious and makes a great change. To prepare it, peel it and then split down the middle. Take a spoon and remove the seeds. Then cut into chunks and cook them in a little butter and crème fraiche with some chopped dill.
- Why not try pickling your cucumbers? It’s really simple if you just finely chop them and then add them to a big bowl with some salt, white wine vinegar and plenty of chopped dill. Leave them overnight if possible and serve nice and cold with smoked fish or with cheese or whatever you like. They are also a delicious addition to a potato salad with red onion and radishes
