What to eat this month
Apple Strudel
What you need
- 1 pack of frozen puff pastry—thawed and rolled out very thinly into a rectangle on a floured board.
- 500–750 gms Apples, peeled, cored and very thinly sliced.
- 1 and a half teaspoons of Cinnamon
- Good squeeze of lemon juice
- 60g Raisins
- 2 tablespoons of caster sugar
Directions
- Mix items 2–5 in a bowl and spread over the pastry, leaving a margin all round. Damp the margin with water and fold inwards the two side edges. Roll up into a sausage shape and press down the final edge.
- Melt a good knob of butter on an oven tray and lift the strudel onto the tray, ‘seam’ downwards. Curve round slightly into a crescent shape. Brush with the melted butter and cook at 170 C for 30 mins. or until golden. Serve with cream or ice cream.
