Corn with sun dried tomato mayonnaise
What you need
- 1 corn cob (raw)
- 1 cup of walnuts (soaked overnight if possible)
- ½ cup of sun dried tomatoes (soaked at least for an hour)
- 2 Tsp olive oil
- Pinch of sea salt
- 1 tsp of apple cider vinegar
- ½ cup of water
Directions
Cut the corn from the cob and set aside. Place all the other ingredients in the blender and blend until smooth. Mix it all well in a bowl. Serve in a small bowl, dish or wrapped with the corn leaves. Enjoy a mouthful of life!
