July's best: Cucumber
A major player in salads (and in DIY beauty treatments) the cool cucumber can just as happily be used to bring highly nutritious freshness to a wide range of dishes.
Our quick and tasty tip:
- Peel and slice the cucumber as thinly as possible. Then arrange in a dish and pour over warmed rice wine vinegar and caster sugar. Sprinkle with finely chopped dill, season with salt and pepper and leave to marinade. Drain before serving.
