Apple Strudel

Apple Strudel

What you need

  1. 1 pack of frozen puff pastry—thawed and rolled out very thinly into a rectangle on a floured board.
  2. 500–750 gms Apples, peeled, cored and very thinly sliced.
  3. 1 and a half teaspoons of Cinnamon
  4. Good squeeze of lemon juice
  5. 60g Raisins
  6. 2 tablespoons of caster sugar

  1. Mix items 2–5 in a bowl and spread over the pastry, leaving a margin all round.  Damp the margin with water and fold inwards the two side edges. Roll up into a sausage shape and press down the final edge.
  2. Melt a good knob of butter on an oven tray and lift the strudel onto the tray, ‘seam’ downwards.  Curve round slightly into a crescent shape.  Brush with the melted butter and cook at 170 C for 30 mins. or until golden.  Serve with cream or ice cream.
